We chose to eat dinner at home and made another one of our favorite recipes – Shrimp & Nectarine Salad. We were unable to find nectarines this time of year so we chose to use strawberries but any fruit will work. Chad had some leftover ingredients from the previous salad we made so he added avocado and lime to his as well. He even added a little EVOO to the dressing.
Later on that evening we attended a SMART recovery meeting. We have been checking out recovery meetings of different types since starting our journey. Most of which we had heard of before or had recently recommended to us. We had not ever heard of SMART. We both really enjoyed to things we heard in the meeting as well as the people we met.
Tuesday morning we went over to the Front Porch, a onsite café located across the street in the RV Sales Area for breakfast. One of the perks of staying here is free breakfast each morning. Similar to a complimentary Continental Breakfast you receive when staying at a hotel. There are 4 options to choose from – 1. Daily Special: Scrambled eggs, sausage or bacon, potatoes & toast (you cook the toast yourself, you will want to watch it closely because Chad overcooked his slightly), 2. Breakfast Sandwich: English Muffin or Bagel with egg, cheese, with choice of bacon, ham or sausage, 3. Two pancakes with bacon or sausage or lastly you can pick 2 of the following options – Cereal w/Milk, Greek Yogurt, Bagel, Pastry, Oatmeal and Toast.
There is a large dining area and there are many options of beverages to drink with your meal that are free such as juice, coffee, and soda.
Chad had a customer visit in the morning but came home in time to take me to lunch at Cracker Barrel which is located across the street near the Lazydays RV Sales Office. We shared a Fried Chicken meal which consists of a breast, thigh, leg & wing, a choice of 2 sides and comes with corn muffins or biscuits. We chose the garden salad with Ranch dressing and hash brown casserole. It was plenty of food for both of us. With a sweet tea for Chad, water for me the total came to $17.63 including the tip. We were so hungry that I forgot to take a before picture and a halfway through picture isn’t quite the same.
For dinner Tuesday evening we chose to eat in and fixing another one of our favorite recipes Chicken Escabeche with Cilantro Black Beans. I will be the sous chef & dishwasher again this evening. We do our best especially now with a smaller fridge to use up ingredients that we have. We are trying to use up cilantro, carrots & a red onion that were purchased for previous recipes. We also don’t like to waste food if at all possible.
